I am making this at the moment. Since before Christmas I have had a whole lot of cranberries sitting in vodka & a little sugar but I have now decided (after a little taste) that there are too many cranberries & not enough vodka in the jar, so I had a look around for a suitable relish to make with the fruit. I love onion relish so I thought this would be very tasty. I'm making it in the slow-cooker as the ones I made in it last autumn were so easy & it meant I didn't have to stand for hours stirring. Also It's much easier to clean up afterwards¦..no burnt bits¦!! I know this says it's a Christmas relish but I think of all those cold cuts , cheeses & salads I eat in the summer. Mmmmm!!
