I came across this recipe in a book this afternoon and thought some people may be interested.
Dandelion Jelly
4 cups of dandelion flowers, you just want the petals no green bits
4 cups of water
1 packet of pectin 11/2 ounce
1 teaspoon lemon extract or 1 tablespoon of lemon juice
4 1/2 cups of sugar
pick the flower heads without the stems in the morning
bring the water to the boil and add the petals
bring back to the boil and cook for 3 minutes
strain out the petals , there should be 3 cups of liquid left
discard the petals
stir in pectin , lemon extract and sugar
bring to the boil and cook for 3 minutes
pour into warm sterilised jars , seal at once
