Hello Shelley- I had a look through my recipe books and one of them had diabetic jam in the index, so I was all optimistic and checked it out. What it amounted to was cooking the fruit so it made a pulp then freezing it. Not really what I would call jam!

Probably need to use diabetic sugar or a couple of suggestions on this site is to use fruit juice as a sweetner or mix the fruit with apple sauce for a tasty spread.
