Thought Id share this recipe with you as I made some today: it was a French recipe that called it green tomato marmalade with cinnamon
1.2kg green tomatoes
2 large lemons
800g sugar (approx)
1 cinnamon stick
chop the tomatoes into quarters and take out the seeds and juice (throw away the seeds etc)
zest the lemons and then juice them
put the tomatoes into a blender with the lemon zest and blend to a pulp: if you find you tomatoes are too dry to blend easily as I did, then add the lemon juice at this stage.
weigh the pulp and add around, or slightly less than the same amount of sugar add the cinnamon
cook as for jam until the mix is thick (mine never reached setting point as for jam; it has the final consistency more of a butter or cheese!)
put into sterilised jars and allow to cool
ENJOY: it really does taste nice and very different from other jams I have made
