Has anyone made jams or chutneys with dehydrated fruits? Not sure whether the dehydrating process would destroy or concentrate the pectins .......... then again it may have no effect at all. Any thoughts please?

Hi Tracey,
Years ago I made apricot jam with dried fruit & it turned out OK but you certainly had to soak the fruit first to rehydrate them as they were much drier than they are nowadays. To me the jam has a different taste that that made with fresh fruit but in those days we had little choice as few people could grow their own exotic fruit. Here is a link to a recipe using dried apricots¦¦..

Hope this helps.
