3 3/4 cups of peaches peeled, pitted and crushed I used a potato masher
1/4 cup of lemon juice
1 package of powdered pectin
5 cups of sugar
place crushed fruit in a large pan, stir in lemon juice and powdered pectin.
measure out sugar and leave close by
bring fruit to a full rolling boil stirring constantly
quickly stir in the sugar and bring back to a full rolling boil, boil stirring constantly for 4 mins
leave to stand for 4 or 5 mins stirring occasionally.
pour into sterilised jars filling to 1/8 th of an inch head space
process in a boiling water canner for 10mins.
I made this today as I had peaches to use up. I won't know if it will set yet but going by the bench where the spoon lay and the spoon I don't think there will be any problems.
It came from my amish canning book hence the boiling water canning. But it was so easy to make , no cooking the fruit first and no messing with plates in the fridge or jam thermometers.
if you want to have a go at this but want to use liquid pectin let me know and I will post the other recipe as the quantities are different.
