rescuing my bramble jelly

Hia folks, long time reader first time writer with some probably dopey questions for you...

I made bramble jelly last year but have had to instead accept that I have several jars of coulis taking up room in my fridge... if I were to boil them all up again with some pectin, could I finally have some jelly? If so, how long would it last?

My Nan says it will work so I reckon it must be true...Laugh

Hi Nuteski

Yes reboiling it with some pectin or fresh lemon juice - 2 tablespoons to 900ml of liquid would work. The rolling boil evaporates the water and the jelly sets when there is the right ratio of fruit juice to sugar.

However, your coulis is a year old. I personally would use it up in cooking - baked chops (lamb or pork) are delicious baked in coulis. Why not try making a fresh batch this year?

i have enoungh blackberries to do it, but hate to waste what I've got! Plus I don't eat meat... Will it work with year-old coulis?

thakns for the advice, I have boiled it all up and added pectin and it appears to have set, I guess I'll just have to feed it to the kids and see what happens Wink
