Ah-ha I have just made a version of this recipe.....my version now !

I hadn't got quite the weight of strawberries so I thought what the hell....!!!....I had some apricots in the freezer that I needed to use (to free-up some space for a bargain buy of belly of pork). I also added some orange zest & juice. Well, it seems to have set OK & tastes great hot....now I have to wait for it to cool down. Not sure I will want to eat it with cheese as the recipe suggests, maybe cream cheese would be OK ? I think it will be lovely on toast. It doesn't taste either vinegary or peppery but there is a slight prickle on the tongue. Another time I will try adding a bit more of both of them. Maybe they will be more noticeable when it cools.

It is really good now it's cold......mine is a softish set. I thought this would be so as I was cooking it but that's the way I prefer it. It will get eaten pretty quickly I suspect. I think it will make great jam tarts & as a glaze over other fruit in tarts, or with cheesecake. I was lucky to get a deal on the late strawberries but I think made with the earlier full-bodied ones it would be even better.

Hi Janet,
I always put black pepper on my fresh strawberries....it intensifies the flavour of the fruit. In the jam you really couldn't actually taste it, there was just a slight prickle on my tongue afterwards. I will definitely make it again.
