Every year I am lucky enough to get a lot of apples donated for help with my preserve enterprise (all profits from my sales go to charities).
I use a lot in chutney with Apple & Ginger chutney being very popular and a lot I juice to use in jelly making (mint, rosehip, chilli etc).
BUT I have never found a recipe for an apple jam that really appealed. I did try apple & pear but I wasn't overly impressed with the flavour. However I have found a couple of recipes this morning I might give a go. Apple & Lemon and Apple and Blueberry. I stumbled on these when Googling Lemon Balm as I wanted to see if I could use the leaves in any of my jams or jellies.
So does anyone have any recipes or ideas please on how to use (a) Lemon Balm and (b) any interesting recipes for Apple jam (that wont just taste like apple sauce).

Excess of apples ? That seems to apply to anyone with apple trees, and in our case, it is just the same as the windfalls alone are keeping me busy already!
Yesterday made some mixed fruit jam which has turned out lovely.
Plums, apples, blueberries and cherries - it is a rich dark red jam, and OH has already given it the thumbs up!
