I was asked a question today that I do not know the answer to:
My wife picked up some marrow bones last week from our local butcher along with a veal shin and I propose using both in some slow cooking treat and was rather hoping that your readers might have some thoughts. My mother used to roast them and then spread the marrow on toast with lots of parsley ...but I cannot remember how she did it.
As kids, the marrow bones in a stew or casserole were a prized treat, to be argued over jealously. The winner would noisily suck the juicy marrow from the bone to the envy of the other four siblings.
So: I guess there are two questions:
1 - What slow cook recipe would you suggest for the above ingredients?
2 - How do you suggest the roast and spread marrow might have been done?
Never knowingly underfed

roasting them is the easy bit the trick is to cut it into lengths before you do to make sure you can get the marrow out when its done. and don't forget to cut the joints off so you don't have a blind bone that you cant ferk the middle out of .this was one of my old moms favourites too danny ,allways knew she was in a good mood when you smelled the bones roasting as you came home from school
as for the shin slow cooker it as a stew but use shallots or very mild onions otherwise you will overpower the veal ,it such a delicate flavour its easily lost in a powerful mix ,i personally like it in white wine with sage dumplins, and gently roasted millet added just before the end ,
im'e hungry now ,going to find something to eat

Two ideas here:
1. roasted veal shin (not slow cooked!)
2. roasted marrow bones recipe
I haven't tasted either of these - something I will have to rectify!

Problem was, my original post disappeared into the ether, so had to re-type, and re-link!
TA, when you casserole anything 'on the bone', you'll be getting that sort of flavouring included - I suppose it is a bit more obvious though, actually eating it straight from the bone.
