Sweet potatoes aren't really sweet. I cook them several ways - as fries but baked in the oven; boiled and mashed with nutmeg and sour cream; or baked whole then the innards scooped out, flavoured and returned to the outer skin. I also have an Indian dish which calls for cubed sweet potatoes to be added to a chicken and coconut milk stew - I know it sounds strange but it's quite tasty.
Home is where the heart is.
Sweet potato and butternut squash are two of my favourite things to eat. Yesterday I made a soup with butternut squash, sweet potato, onion, chilli flakes and coconut milk. It is quite delicious, although a little fiery. I hope the folks on the course I am catering for on Saturday like it.
