I find this site amazingly useful when I have a glut of vegetables, here's the marrow page. A lot of the recipes are vegetarian. I have tried theMarrow & Parsely Cream Crumble & it was delicious.

I love young marrows, sliced very thinly as part of a Japanese Vegetable Tempura, with a dipping sauce. You need to make an authentic tempura batter though, otherwise it won't come out crispy enough.
I am a huge fan of Japanese food & have prepared it for years. This site has so many recipes, advice & information on it for the preparation & presentation of their dishes, many of which are vegetarian. Here's the Tempura page.

I have tried marrow rum one year using a link from Fiona's site and one year it worked well and another it didn't. Would be interested to know how you go about it Primo Cordelli? Welcome by the way to the site. The Marrow Rum that worked was gorgeous.
