I made a simpler variation of the above salad today. I cooked the duck livers with the quartered pears in the halogen oven on highest heat, having dressed them with smoked-garlic olive oil, a little chive vinegar (home-made), lemon juice & dried savoury, salt & pepper. I cut up the endive & chucked it into a bowl with a dressing of hazelnut oil& orange juice & dusted it with Za'atar (one of Steenbergs wonderful spice/herb/seed mixtures). When the livers were cooked/undercooked to the right shade I plonked them & their cooking juices on top of the endive & ate it with brown seedy bread to mop up the juices.

One of the best meals I have had in ages. I can see it becoming a great favourite this summer as it would be great cooked on the BBQ. It is so quick to prepare. You could add bacon lardons but I decided not to this time & I really didn't miss them at all, but then I love the taste of liver, others not so keen might prefer it with the bacon bits. I also think this would be great in pitta but you would need to cut the livers into bite sized pieces.

I think this Australian recipe for Chicken Liver & Broad Bean Crostini  sounds really good, although I would prefer duck livers myself (unless I was using livers from my own surplus cockerels). Broad beans will soon be ready to harvest by those lucky enough not to have watched their plants wash away in the mud.....aargh .

My first broad beans are nearly ready in our greenhouse cheers. Must investigate doing a chicken live pate, as they are relatively easy to get here in Latviacheers
