Made this recently, quite tasty. Made a white sauce roux, cooked sliced button mushrooms in butter till soft, combined and pulsed in processor to a consistency with small particles, but not completely pureed.

Roux

30 g Butter

30 g flour

600 ml semi skimmed milk,

pinch ground nutmeg

and salt and pepper to taste.

Blend flour with melted butter in pan, slowly add the milk with vigorous stirring until the flour thickens using medium heat.

300g sliced button mushrooms, sautéed in a pan with some butter (a generous dollop)

Combine and pulse in processor to visual consistency that you prefer.

I just remembered about this Blog, lots of ideas for soups and salads here, all vegetarian but you may add meat if you so wish it.
