I made the Peanut Butter, Honey and Oat muesli flapjack type bars from The River Cottage Everyday Cookbook on Sunday.
I don't have the exact recipe to hand but you melt unsalted butter, peanut butter, honey and brown sugar in a saucepan. Then you stir in 150g of chopped fruit, 150g of mixed seeds and 200g of oats. Stir til it's all mixed, then pour into a greased, lined baking tray. Sprinkle more seeds & honey on top and bake at 160C for around 25 minutes.
Let cool and cut into bars, store in an airtight container.
I had two for breakfast in work today and felt practically healthy.

Ah but you cut it into bars around an inch wide and 4 inches long, and then have one in work for breakfast. With 2 or 3 mugs of tea. They're much nicer than the cardboard muesli bars the canteen sells, a change from a scone or toast and keep me going from 08:00 to lunch at 12:30 🙂
