I deleted the blue cheese from my bookmarks cos it was so bad, but this is another which is basically the same recipe, I split the soup into 2 - 1 with cheddar and 1 with blue cheese - they were equally both disgusting. Going to some poor animal tomorrow.

Just a quick glance at that recipe - I like to include onions, and I would have very gently fried the onions and leeks till softened and become sweet, before adding the potato and stock (not cheese at this point). The cheese of choice added at the table to the 'vegetable' soup.
Not sure if that would have made any difference at all, Fiona - but that's how I would cook it!!
