The slow cooker chef: Low fat summery lamb shanks braised in red wine and tomatoes recipe

I tend not to buy lamb shanks as they usually look so weedy and unappetising. Last week I spotted a half price pack of two lamb shanks on the Tesco condemned food counter. These were quite chunky (just under a kilo) and the original price was pretty stout too. They had been reduced from £7.95 to £3.50. So naturally they ended up in my trolley. I decided to try just using ingredients that were knocking about in the fridge and larder and devised this dish that would easily feed eight. The combination of carrots, tomatoes and red wine worked...

The slow cooker chef: Hot spring game pie

It’s the time of year when we start to clear the freezer of game given to us during the shooting season. We tend to keep our eyes peeled for cut price game.  Waitrose stocks rabbit, venison, pigeon, partridge and quail. All quite expensive but often marked down to half the original price –these are brought home and secreted in the freezer until we have the perfect ingredients for this subtle game pie filling. Our favourite combination is venison, rabbit and pheasant. This pads out the pheasant and gives a tremendous range and depth of...

The slow cooker chef: Organic steak and kidney pie for carnivores on a budget

We are eating far less meat these days. Eating superb meals most evenings.  But sometimes we long for a real alpha carnivore meal, especially as we have ditched the Cottage Smallholder Friday night steak treat – just too expensive at the moment. This recipe is so easy, delicious and cheap. If you used non organic ingredients you could probably cut the price by at least 30% (just 62p per portion. A steal for a rich meat heavy dish.) I decided to turn some of our shin of beef (£8.00 for 2 kilos from the organic butcher) into a slow cooked...

How to make the best chicken stock in your slow cooker

I’d written my post for tonight. Budget, delicious chicken risotto for 62p per portion when I realised that the main ingredient – the chicken stock hadn’t been blogged. A horse without the cart is no good for anyone who is travelling in foodie country. So here’s the cart. This stock works with cooked chicken bones or a fresh carcass. The latter makes better stock, I think. If you remember to remove the chicken when it is cooked (1-1.5 hours depending on size) you will have perfectly poached chicken to add to a multitude of other...

The slow cooker chef: a great slow cooked spare rib recipe

To celebrate Jalopy’s heroic performance passing her M.O.T. with flying colours, I ordered an organic belly of pork from The Carter Street butchers in Fordham. I also remembered to ask for the bones. Daniel, the butcher does not ‘bone out’ the joint but slices them off as a rack of spare ribs. What could be better than sticky sweet and sour ribs for Saturday night? As I was working that day I decided to try and find a recipe that could bubble away all day in the slow cooker/crock pot. I found Lyn Utsugi’s tempting recipe for...

The slow cooker chef: comforting low fat cottage pie recipe

During a cold snap a few weeks ago I had a longing for a really good Cottage Pie. So I made a version of this dish in the slow cooker (crock pot). Adding vegetables from our garden – the cottage kitchen smelt wonderful for hours. The slow cooker is a great way of cutting the fat content of a dish as the meat doesn’t have to be browned in oil, or the onions fried. When the filling was cooked, I strained off the juices and put the bowl in the refrigerator. The fat was easily removed a couple of hours later. The dish was delicious but the...

The slow cooker chef: Low fat Spanish Lamb braised in thyme, garlic and white wine recipe

“Let’s try making the Spanish Lamb in the slow cooker. It will be cheaper than using the oven and it might enhance the flavours even more.” It was better than the oven baked version, with more depth of flavour and the joint remained plump and succulent. This is a great, easy dish for lazy entertaining. Just a few minutes preparation and then you can sit back as it turns into a delicious melt in the mouth lamb. The tantalising sauce tastes as if you have been slaving away for hours. Cooked a day in advance the dish sang. The fat was...

The slow cooker chef: low fat summer vegetable and bean casserole recipe

So many vegetarian recipes are high in fat with an emphasis on cheese and eggs. These ingredients can pull a flagging recipe round in seconds. We sometimes eat these dishes – the cheese and eggs make tham tasty, I’m cooking for an alpha carnivore foodie after all. Last night I woke at three a.m. and mulled. Surely, with a bit of thought, I could make veggie food that’s low fat and delicious. This morning I opened an eye to the promise of thunderstorms. I was suddenly kitchen bound as I’m working on an outside job at the...
