Baked sausages recipe with Bramley apples, honey and star anise

Sometimes it’s really good to get home, pour a large glass of wine and rustle up a dish that takes just ten minutes to prepare and is cooked in under an hour. This dish also keeps warm well and is a delight when you eventually tuck in. It’s one of those easy dishes. Filling the kitchen with great aromas as you get on with the more enjoyable sides of life than standing by a hot stove. I made a very similar dish a few weeks ago and we loved it. This evening I discovered that the recipe had been swept away on a kitchen clearing binge....

Danny’s simple and succulent herb infused lamb chops recipe

D generally cooks on a Friday. It used to be steak. Now it’s something a bit more economical. On Thursday I found a chunky pack of lamb loin chops in the fridge reserved for his chef spot. They’re cheaper than steak but still a big Friday night treat. When I pushed open the cottage front door he was busy with string and chops. “Don’t look. It’s a surprise dish.” My antenna has 20/20 surround vision. He was tying the chops together with string. The effect resembled an eccentric rack of lamb with chunkier chops. The result was...

The naming of things. Asparagus, Ham and Rice Bake Recipe

When I was a wooden toymaker I made a small car, simply shaped, immensely tactile. My sister christened it the Dumpy Car. I knew in an instant that the name would sell the car. I’d listen to people chatting about the toys on the stand. If I heard them mention the Dumpy Car, I knew that they were likely to buy. The words sound comfortable and solid, good in the mouth, with just enough resonance. I sold thousands of them. Danny has a problem with the name “bake”. “Never make us a bake. I’d have to leave. Just...

Comforting summer sausage casserole recipe

Sometimes it’s chilly on a summer’s evening and we want to eat something comforting. In the winter we eat a superb heart warming sausage casserole so I decided to make a summer version with loads of fresh tomatoes and long red peppers. We had some sweet and hot pickled peppers (American) in the larder so I chopped and deseeded them and popped them in too to give the dish a bit of a zing. As you can see from the photo, the overall colour scheme was red. I peered into the pot as it simmered away and considered a fresh coriander...

Baked pork chops with summer vegetables and white wine recipe

“I’ve always been suspicious of those.” I was reaching for some Romano peppers. Curious, I glanced round. The lady beside me was smiling. No one ever talks to me in the supermarket, apart from the staff at the checkout. In an elongated split second I twigged that she was probably chatty, not mad. “Are they very hot?” She queried. “No, they have delicate flavour. Light years beyond the bell pepper.” We talked for a few minutes. Her daughter had flung a pork chop into the garden at seventeen and...

Bunty’s half remembered Asparagus and Ham bake recipe

Five years ago my friend Bunty mentioned this recipe to me. “If you are pressed for time. This asparagus dish is lovely. It is classy.” She twinkled so much that I knew that this was a good dish. I was not tempted. I love asparagus. Plain and steamed to a point where it still has a bite. Served with hollandaise sauce or melted butter. Why would I want to try a dressed up asparagus dish when I prefer my asparagus naked? Today I visited Fred Fitzpatrick’s and bought some excellent thinly sliced smoked ham. I grabbed the last...
